Love this flour. Do wish the packaging was more environmentally friendly.

I have Type II diabetes and making baked goods from einkorn is very, very healthful. It is slow to digest so it doesn't trigger the insulin response like regular flour. Regular flour has been hybridized and over-processed he hell out of it to get a soft, white product that digests into simple sugars really fast.Recipes for einkorn are now becoming more plentiful but I find different manufacturers of einkorn flour produce product with very different moisture content. Einkorn works very differently with moisture compared to regular flour. So you have to experiment and get used to the texture. It absorbs moisture more slowly so you need to let your dough or batter sit for a while before baking. It does not respond well to kneading as it will not form the same glutin structure.

We will add this review once we have a chance to bake with it but overall super impressed at how quickly this got here, especially considering everything that’s going on in the world, this was purchased during the Covid crisis.Doesn’t give an option to upload my pictures but it looks great when it arrives!Grateful to have a source of organic einkorn flour and this will be our first time trying this one.You can see from the pictures that they got here in great shape the flower looks awesome I love that you can see through the bag to see the product and only teeny tiny little bit they came out during shipping which is to be expected with flour.

Einkorn flour seems to be the new white flour. Some people say it needs a nutrition label to be real Einkorn flour. But give this company a try you will be pleasantly surprised. High protien lower glycemic. This product does contain gluten but it is a diffrent type it maybe healthy version of modern wheat. Try it

My second review and I'm still using this flour as my all-time favorite. I experimented and came up a new recipe for a thick, slightly sweet and hearty bread. I use all organic ingredients and combine salt, yeast, a small amount of sugar, 1/3 c. molasses, 1 to 2 cups cooked oatmeal and 1/2 cup coconut flour, plus the einkorn flour. Prepare as you would any other homemade bread. It's fantastic! This flour never disappoints and you can taste the difference.

Overall, satisfied with the product. Locally grown, organic einkorn that tastes great. I docked one star because it came very coarse. I had to run it through a blender to use in recipes. Otherwise, everything turned out too grainy and off. If the seller can do this better - and get to a consistency closer to the Jovial brand from WH I am used to - I would become a regular. As it stands, having to blend each time and the accompanying wear is too much of a hassle.

Einkorn flour is my go to flour. Organic Stone Ground Whole Wheat - is exactly what I was looking for. I use it all the time now for bread, cookies, waffle batter, pie shells and more. I like that I can get it in these convenient sized packages. It makes it easier to store the flour properly.

Fresh & delicious. I'm very gluten sensitive and I can tolerate Einkorn. I use it for all my baking needs. :)
