Vegetable Soup Review
I purchased this item over a month ago and have used it several different ways, mostly as a soup or as a mixed vegetable side dish. I am writing this mindful of the negative and positive reviews this product has elicited. First and foremost, this is my first purchase of the Harmony House products First the Cons:1. The product is titled "Dehydrated Vegetable Soup". Though when I opened the product, it did indeed possess a very pleasant aromatic aroma.. it was not a dehydrated soup. It is dehydrated vegetables that can be easily used with your favorite soup recipe.. In all fairness, Harmony House should make this clear on their label.2.. The vegetables are in a raw or near raw state as far as I could tell. That is OK with me, but I can see where some might believe that you just add water to re-hydrate and boom, you are ready to go. I actually did this and vegetables crunched like they were raw... Again, not a problem for me, but for some, I can see where they may have been surprised. This is something Harmony House can easily correct with their labeling and product descriptions on Amazon.3. The product did not come with a re-hydration chart. An oversight perhaps? One can be obtained from the Harmony House website.Now for the Pros:1. Harmony House added plenty of aromatic vegetables to the Soup Mix.2. Packaging is excellent3. Once re-hydrated and cooked to my satisfaction (simmered for 15 minutes), the vegetables had a good flavor and texture.4. I used these vegetables as sides dishes and in soups that met or exceeded my expectations.5. Very little or no waste when using these dehydrated vegetables. Measure out what you want and you're done.7. The product seems to maintain its freshness for quite a while. After opening, I have mine stored in the original container with no issues.8. Campers and backpackers can easily create their own food kits so they won't deprive themselves of their daily vegetables.9. Excellent product for people with busy schedules.All in all I am quite satisfied with Vegetable Soup Mix and will purchase again and try some of their other products as well. I am hoping that Harmony House or their re-sellers will do a better job of describing their products on Amazon's web pages.

Exactly as advertised
I made a quick soup with the vegetable soup mix and added a slick of cubed Spam. I did soak the soup mix over night and it was ready in the morning. Cooked fast and tasted great. The size of the vegetable pieces seemed to assure of an even re hydration.

I'm having fun with my soup experiments.
Well, one day I got sick of buying canned soup because it suddenly all started tasting the same to me: old soggy food soaked in brine. So I decided to see if I could find a different way to have soup that tasted good and didn't require any work. So I decided to try these dehydrated vegetables.The upside:They keep a long time and they can be used in soup anywhere I'd use vegetables. Just dump them in.I can control the ingredients going into my body. I do the keto diet, and with these vegetables I can consume controlled amounts of carbs in a natural way without using refined sugar or flour.They taste better than the vegetables in canned vegetable soup. That is, I can actually taste some of the individual vegetables after they have been reconstituted.The downside:No, they don't just turn back into fresh vegetables when you "just add water." They bounce back to about 30 to 50% flavor and their fullness doesn't return. They get about half way back to what they were, but at least they're crunchy in soup and not soggy mush.They seem a bit spendy, but then a little goes a long way. I figure I'll make the equivalent of about a dozen cans of soup out of this 12 oz container, so this really is a cost-effective solution for vegetables in soup, and is very compact to store.So, right now I just cobbled together a seafood soup with these vegetables, the dehydrated tomato powder from the same vendor, and one can from a stack of canned anchovies that I'm trying to use up. It came out really good, was nutritious, and took practically no time at all.

Easy to Use Delicious and Healthy
Harmony House Vegetable Soup mix is made of dehydrated fresh vegetables and has no additives. How can you use this?I put 2 tablespoons per person in a small bowl and add hot water. Then I start cooking noodle, pasta, or potatos as ordinary, and in a few minutes I add the Harmony House re-hydrated veg to the pot of noodles, pasta, or potatos. It tastes great, looks great, and is an easy way add high value nutrition to the meal. I use it for lunch and dinner every day.

Nice product, Very Versatile
I like to make my own soups and dips. I own a dehydrator and often dry my own veggies for those uses but honestly, it takes a LOT of fresh veggies and herbs to make the amount of a mix you get with this product! So I feel that it is a good value at $12.95.I like the fact that this product is pure vegetable and herb. No fillers, No MSG, no weird preservatives I can't pronounce. A silica preserving packet is included in the container. The caloric content is 58 calories per 1/4 cup dry product. 0 fat and cholesterol and only 49 mg of sodium per serving. Ingredients as listed in order on the label: Dehydrated carrots, Onion, tomatoes, peas, celery, green bell peppers, green beans and parsley.This makes a nice soup base with water but I prefer to use chicken or vegetable broth. I also like to reconstitute the mix and add it to whipped cream cheese or greek yogurt for a nice dip. I also reconstitute and add it to scrambled eggs! It is great added to your meatloaf or hamburger mixtures too. Some uses do call for it to be rehydrated but there are other uses that benefit from the crunchiness of the dehydrated form. Put some in your coffee grinder (I have one that is used exclusively for herb and spice grinding) for a powdery version. If you have a large pepper mill you can put it in there and grind a nice veggie seasoning on anything as you would with pepper! There are many uses for this product and I am enjoying getting creative with it.I recommend this vegetable "soup" mix. I wish they would rename it Vegetable "EVERYTHING" Mix.
