Amazing product!!!
Love this stuff.. wished it sold a little cheaper.. our local Hmart which carries Asian products sells this guy for $2... I guess it's what I get for delivery convenience... Over all, product is great and I bought more of this stuff as back up.. Great for substitution if you prefer Halal jello over gelatin, and it sets much better than jello even at room temps.. I enjoy the thought of knowing I'm eating something that is better for you in terms of food choice...

NOT pure Agar Agar...
I figured out how much of this was Agar Agar, with a recipe to make those gem candies... 6oz package/170grams 11.34 grams per serving 10 g of it is sugar 1.34 g is agar agar; so 1/4 to 1/2 tsp is agar per serving. So 15 × 1/4= 3 3/4 15 × 1/2= 7 1/2 So it is 88% sugar & only 22% agar agar. Recipe for edible crystals is 1/2 C liquid per 1 tsp of pure agar. So there's 3.75 to 7.5 tsp in the entire bag. 1.34 × 15 = g of agar 20 g agar total So about 5 teaspoons 5 t × .5 = 2.5 Cups needed, NOT 6 cups as the packaging suggests! Silky gem recipe with PURE Agar Agar (from the Silky Gem website): How do you make Kohakutou? • ½ cup water (or your favorite juice, tea, coffee - be creative!) • 1 tsp agar agar powder • 1 cup sugar • Food coloring (optional) • Flavoring extract (optional) How to make crystal candy: a step-by-step guide Here's what you'll need: • Small saucepan • Square or rectangular food storage container • Parchment paper • Knife • Optional: skewer, small paintbrush • Bloom the Agar Agar: In your saucepan, combine ½ cup of cold liquid (water, juice, etc.) and 1 tsp agar agar powder. Let it sit for 5 minutes, allowing the agar agar to absorb the liquid and bloom. • Sweet Symphony: Heat the mixture over medium heat, whisking constantly, until the agar agar dissolves completely. Once dissolved, pour in the sugar and keep whisking until it's fully incorporated. Let the mixture simmer for about 5 minutes, watching it transform into a thickened, light yellow syrup. • Shaping your Crystals: Pour the hot syrup into your lightly oiled container, ensuring it's about ½ inch thick. Now comes the fun part - customization! You can add a few drops of food coloring and swirl it with a skewer to create beautiful patterns. Want to add a flavor punch? A few drops of your favorite extract will do the trick! • Setting the Stage: Pop your container in the fridge and let the jelly set for at least 2 hours. • Unveiling your Gems: Once chilled, use a knife to run along the edges of the container, then gently remove the jelly. • Crystal Carving: Here's where you get creative! Cut the jelly into bite-sized pieces or get fancy and shape them into crystals. Don't be afraid to experiment - irregular shapes can mimic real gemstones! • The Great Crystallization: Place your creations on a parchment paper-lined surface. Now comes the wait! Leave them at room temperature for 3-5 days. Patience is key as they develop their signature crunchy shell. • Treasure Chest Time! Once your Kohakutou boasts a beautiful hard crust, store them in an airtight container at room temperature for up to a month. Silky Gem's Top Tips for Kohakutou Perfection • Flipping for Success: When drying your Kohakutou, flip them every other day to ensure even drying on all sides. • Sharing is Caring: Once you've mastered Kohakutou, why not share your creations? They make stunning cake decorations or party favors! • Budget-Friendly Bling: Kohakutou is a delightful and affordable way to add a touch of elegance to your desserts

This is a good product that I usually buy locally
This is a good product that I usually buy locally, but when you're in the middle of nowhere (Hilo, HI) then Amazon is the only place I found for a decent price. I use this powder when I make double-layered coconut jelly dessert since the density difference between coconut milk and water (+agar) makes a great layer separation. It's lightly sweetened, so those who prefer sweeter agar may have to add extra sugar/honey/sweetness.

Does not set up properly
I originally bought this product to make a Japanese candy called Kohakutou. I made many attempts with this particular product to try to get it to set up with no avail!! I have doubled the grams to use for the recipe from 4 g to 8 and still didn't even set up properly even as a gel! I have dissolved this product properly and still does not set up properly!! The gel appears to set up but when you release it from a mold form it crumbles so you can't form it in the shape you want and it falls apart If you guys were to get this just keep it in a regular rectangular form so you're not disappointed if it falls apart on you The flavor of it is pretty decent though and it really conforms to the colors or the flavorings you add to it.
