I need to secure (from easy swiping and theft) a custom design doormat to low pile walkway carpet in apartment, will this work well for this purpose?

It might keep mat from sliding but I don’t think it will secure it enough to protect from theft

White or black adhesive? I see that this has a white adhesive. is there a similar product with black?

Yes it comes in black just look for it that color

White or black adhesive?

Product has a white foam tape adhesive.

Will the adhesive side stick to stucco?

Probably not. I wouldn't count on it working.
