Food of the future
I teach a course called "Intro to Sustainability" at Rutgers. I bought these cookies for my students to enjoy while they were taking the midterm. We had been discussing some of the UN Sustainable Development Goals about ending hunger. They students had been discussing the issues of food production and distribution - how can we provide enough food to meet the needs of the world's population. These cookies, with their insect protein, were a curiosity, but also a lesson in entrepreneurship, and making a product that would enhance sustainability. Of course, having them shipped across the country added a lot of vehicle miles to their carbon footprint, but I couldn't find a local dealer. Thanks for a delicious way to have a conversation about food and sustainability.
