What is the maximum update rate? 50Hz? 400Hz?

I update mine at 250Hz, 4msec. Haven't tried going faster so don't know if 400Hz is possible

Is the BEC linear or switching in these?

The BEC is a constant 5 V output You're running extra equipment on your airplane you might want to use an additional capacitor pack on your Receiver

How do I program the brake?

You set the break with the transmitter with the throttle stick and the paperwork for the ESC that it comes with will explain how to do so
