I’ve never gotten a jar this big — usually I just get 2-4oz jars of a different brand at the store and they get eaten in one sitting, tho I think once I fridged a bit for 24-36 hours — but I can easily imagine myself polishing this 12oz jar inside of 4 days max, and I’m pretty sure it would be fine for a week in the fridge as long as you screwed the cap back on tight. Fresher caviar that isn’t so salty wouldn’t last as long, but this is also heat-canned so unless you get some salt-resistant bacteria into the jar after you open it, it’s virtually guaranteed not to grow any nasties in your fridge for a long long time. At worst the texture might suffer over time. How long would you keep lox (opened package, but in a ziploc bag) in your fridge? This should last longer than that. **Q: This is junk...its not real....its paint and what ever is it? Want real caviar????** A: It's NOT junk. It's good quality LUMPFISH caviar, at a good price.
