Does it last as long as other such sauces since it is organic?

At my house , it lasts until we eat it. I do not refrigerate the sauce. I stays on the kitchen counter. We tend to finish the bottle in a couple of weeks. To keep it longer you might refrigerate.

Can you make a Carolina reaper sauce

I suppose I could, but why would I want to do that? I can not eat raw jalapenos. Their Scoville Heat Unit rating is about 5000. Carolina Reapers are about two million SHUs. I rest my cast.
