Expensive. Muffins OK. My friend liked it. You can't expect this to be something it's not.
Normally I make the "Jordan Marsh" recipe blueberry muffins, but I got this to make for a friend who has gluten free and dairy free dietary requirements. It is expensive, I think, for what you get. I prepared this mix with soy milk and frozen blueberries. I tried one of the resulting muffins to make sure they were fit to serve and they were... basically OK. The "bread" did have a mild but definitely different taste than muffins made with wheat flour. I'd say it was kind of "earthy." It wasn't necessarily bad, just different than you're used to. You can't expect this to be something it's not. Regardless, my friend liked them well enough and took the rest home with him, and I am glad I was able to make something he could enjoy. I would buy this mix again if I was making muffins for my friend again. :)

Really Wholesome And Delicious Gluten-Free, Allergy-Free and Vegan Muffin Mix
This Marvelous Muffins Mix is perfect if you are vegan, have gluten allergy, or have allergies to dairy, egg and/or nut. I've been buying alternative mixes for cakes, muffins, pancakes, cookies, etc., for years as my 14 year old son grew up with severe dairy, egg and nut allergy. He seems to have outgrown egg allergy, but we still prefer vegan and allergy friendly mixes we can prepare to accommodate his allergies. Also, the alternative mixes are usually made of simpler and healthier ingredients than name brand mainstream mixes.This muffin mix is exactly the type of product I appreciate, and we all enjoy in our household. The mix is vegan, gluten and allergy free and can be prepared to suit various food allergies. To prepare as directed, just add 1/2 cup milk, 2/3 cup oil and 2 eggs. If prepared according to directions, the recipe will of course still be gluten free, but it will no longer be vegan, dairy or egg free. I'm used to adapting mixes, but I like that the box provides suggestions for substitutions to keep it vegan (such as using almond milk and Ener-G egg replacer). The bag also suggests adding 1/2 to 1 cup of mashed banana, ground flax seeds, blueberries, or anything else you like.I used soy milk to keep the recipe dairy free for my son, and cut out 1/3 cup of oil and replaced it with an equal amount of applesauce to cut fat and calories. (The muffins won't be as moist cutting oil in half, but I prefer less oil.) I wanted to use Ener-G egg replacer, but we were out so I added 2 eggs. I also added 1 cup of peeled and diced fresh peaches. This mix is so convenient that it only took a few minutes to prepare and another 20 to bake. Despite my deviations, the baking time and temperature on the bag were spot on. I thought the muffins might come out heavy being gluten free, but the texture and taste of the muffins came out great. Also, I was glad these muffins only taste lightly sweet rather than sickening sweet like so many muffins. I think anyone (whether on a gluten free diet or not) who likes wholesome food will enjoy this delicious muffin mix. I will buy this brand in the future.*I was in a rush and whipped up a batch quickly, so I didn't fill my muffin pan uniformly so not all muffins are the same size. But I am posting a picture anyway just to show how they rise and how they look (keeping in mind I cut the oil in half). This mix made 11 muffins.

Opinions about gluten free products and mixes are always all over the board. Celiacs who absolutely *can't* have certain things are going to be more forgiving about approximations. For my part, I try to control gluten for no medical reason but because I've observed gluten to be a huge appetite "trigger" at times for myself and other family members.This mix caught my eye as it's made with millet and teff. Teff is a grain I've previously loved in injera (ethopian) flat bread, which is fermented like sourdough. I don't think there could be any fermentation going on with the dry ingredients here. (I considered that possibility only because I recently came across a protein powder made with pre-fermented vegetables.)I used my stalwart coconut milk in the place of dairy, and regular eggs. Threw in some berries, and some gluten-free granola on top for texture.The muffins were very crumbly, almost mealy with a sand-like texture. Neither gritty nor dry, but dissolved quickly into fine bits on the plate and in my mouth. I'd say that the best texture in the muffin was adjacent to the berries, so would go for plenty of moist add-ins, making this.The muffins rose nicely, requiring a bit more baking in my oven than suggested on the packaging, but the visual cue of golden-brown color helped me get them out of the oven neither under- nor over-cooked.Two of my kids love these; my spouse and eldest are in contrast certain that these are an inedible insult to "real" muffins. I occupy the middle ground - they aren't bad, but I lean towards rice and nuts as my main grain substitutes and the millet/teff combo creates a flavor profile that to me is just a bit "off". I'm pretty sure that with some tweaking, I could get it much closer to my ideal gluten-free muffin - add some hemp and flax seed meal, maybe enrich with coconut cream and use tons of berries - but at this point the value of a mix vs. "from scratch" becomes a question.Like, don't love.
