In this way you keep them in a less sour liquid that will lessen their salty taste. I just bought a package, for the first time, and I filled two big glass jars with the olives, divided the brine and added apple vinegar to fill the jars up, and cover the olives, because the bag has about half of the needed liquid. The package was a mixture of brined olives, ranging in both types and ripeness. Brown, black, green and shades in between show a mixture that begs to be made into a delicious herbal tapenade or just layered on a sandwich. We put a large amount into a large mouth jar for when the urge to snack hits and the need for finger food satisfies that craving. And the fact that they just typically won't go bad, allowing for a long-term residence in the fridge, which means that they will be there when the need for olives hits. We added in a bunch of chopped garlic and cheese which is proving to be a great addition to the finger food jar.
