Olivar de la Luna organic extra virgin olive oil is made 100% from the Nevadillo Blanco olives that are indigenous to Sierra de Cordoba in the northern regions of Andalucia, Spain. Through the production of this high quality organic olive oil, Olivar de la Luna is able to protect their local environment and agricultural traditions. This small family farm has been organically cultivated since it was established in the 18th century. Olivar de la Luna focuses on energy efficiency, biodiversity, and the recycling of all wastes, such as using the by-products as natural fertilizer. The trees are cultivated without irrigation, much the harvest is done by hand, the majority of the electricity comes from solar power, and even the grass is mowed organically by sheep grazing between the threes. Often used as a finishing oil, it's great on salads, soups or poured over a thick hearty bread.
