Is this grainy if you bake with it? Or does it dissolve right away like regular sugar?

I don’t bake but it dissolves as fast as regular sugar in coffee (I pour about 3TB hot water on it before making Drip) no residue in cup after drinking. Hope that helps.

Does this product contain malt? if so, it should not be labeled gluten free. malt contains gluten!

It does contain malt extract. I'm not an expert, but I've read that products containing 20ppm or less of malt extract is considered safe for consumption by those with gluten sensitivity. By regulation, it must be listed on the label.

The packaging states product is gluten free- does it meet fda labelling requirements for a gf claim? what is the source of the malt extract?

I use it and my hubby has used it in the baked goods I made for him. This is so great-tasting. My hubby doesn't have the most severe celiac symptoms, so I don't attend to the malt origin. I don't think I that helpful, sorry.
