This roaster fit all those criteria. What it came down to was this Cuisinart one and the other, cheaper Cuisinart one. I went with this one because it was multi-clad, which is important for distributing the heat evenly along the bottom of the pan. Also important if you were to take this directly from the oven to the stovetop and use it directly on the burners to make your gravy. I did my first true test on Black Friday of this year, cooking my own Thanksgiving turkey. It fit the 16 pounder beautifully. I like that the rack is more curved than the traditional V-rack, so I get more even browning on the skin. I had no issues with any part of the bird sticking to the rack either when removing it. Some reviewers complained that the first layer of the bottom of the pan started to chip after the first use or so. I didn't have this issue, nor do I see any damage to the roaster at all after cooking. I generally do not use metal utensils in my metal cookware and I did not use this roaster to make my gravy. I poured the drippings into a measuring cup and made it in a separate pan, due to the fact that my stove in my apartment is electric (I hate it with a passion). I may update this review when I use it on a gas burner stove. I highly recommend this product. It's very economical compared to the All-Clad one and cooks wonderfully. I invested in this piece so it lasts me through all my long years of turkey and roast cooking ahead.

**Q: Why does the title describe this pan as 16 inches when the specs below say it's 20 inches?**
A: From handle to handle it's 19 and 1/4 inches across. The inside of the pan is 16 inches across. Maybe the "20.8" is listed to take into consideration ones hands on the handles take up additional oven space.

**Q: Is it safe to use on the stovetop?**
A: Yes.  We chose this pan for two reasons:1:  There is no non-stick coating inside, so the pan can go in a 500-degree oven safely.2:  The bottom is completely flat.  I used it on my glass cooktop to make gravy after the turkey was done and it worked well, because the entire bottom was in contact with the surface.I do not know how it would work on other types of stoves but it's thick and heavy, so I suppose it could work on a gas stove as well?

**Q: Does anyone know the limit on the size turkey this pan can hold?**
A: I am not sure what limit you are referring to, weight or size.  The size is given as about 20 inches long by about 13 wide, the cuisinart mentions it is a 16 inch roaster but it can take a larger.  This is a robustly made pan so I think it would probably take a large bird.  Feels very sturdy to me.

**Q: Is the aluminum in this bad for your health?**
A: The aluminum is in the core.  The outer walls are stainless steel.  I don't think there is any scientific evidence to show leaching of the aluminum in any harmful amounts.  If you are roasting using the solid stainless rack, the food won't even touch the pan. Chose this based on Cuisinart, no coating on the pan or the rack, and the price was manageable without a second mortgage. This roaster has made my life so much easier! One roaster for everything. ### ⭐⭐⭐⭐⭐ This is The One for large holiday roasts

Buy it, you will not regret it (as long as you have room to store it!). I splurged on this one a few years ago after getting sick of a stupid cheap roaster with bad handles and flaking nonstick coating. This is a lifetime pan. You do NOT need nonstick—I’ve used it 8 times for Thanksgiving turkeys and Christmas roasts, and it cleans up easily to a mirror shine after deglazing and maybe a quick soak. Completely flat bottom, no nooks and crannies to make deglazing/gravy a pain. It is a large roaster, similar in size to a half-sheet pan (different shape— a little shorter and wider). It can hold a 22-pound spatchcocked turkey, or several ribs of beef roast on the rack. You do NOT need a nonstick coating, they will always fail and flake off into your gravy. I have no complaints about this beautiful practical roaster. It brings me joy every year. Silly to say that about a pan but it’s true.
