A great product that cuts well above it's price
Just a fantastic knife. I use this pretty much every single day, and have done so for the past 6 years. I am not cheap when it comes to kitchen equipment, and have invested in plenty of higher end cookware over the years. I've tried more expensive knives and I keep coming back to this one. It keeps a great edge, sharpens quickly with any simple drag-type sharpener. The rubber handle grips well, regardless of what your hand has been touching. It's well weighted. Don't think I've ever cut myself with it. Just a really good knife. Don't let the low price fool you. It certainly doesn't look like a high end knife, but it's extremely functional, and I've never felt the need to baby it or worry about protecting it.

Excellent value for price
I was kicking around the idea of a new knife, and after having worked in a kitchen professionally for a year or so, I was 100% over the quality of the target knives, etc. They're junk. Started looking at more expensive knives. Hatched a hair-brained idea to spend a lot of good money on maybe some Japanese knives, just to have the quality. Couldn't bring myself to do that, since it's a lot of money, and I'm certainly not as demanding as a full-blown professional chef. Decided to see if I could instead find the best value knife - one that did it's job well, could be sharpened and maintained easily, had a good handle, and that was actually affordable. This thing delivers. The handle is honestly great. It's meaty, ergonomic, and rubberized (not the hardened plastic style like many professional kitchens use). The steel is sturdy, thin where you want it, and thick enough where you need it to whack through the heavier stuff. Overall, the knife is quite a lot thinner than a lot of the faberware crap you'll find at Target. Lighter too. But in terms of up-to-the-task capabilities of the knife, it blows that stuff out of the water. The last thing I love, is that there's no bolster at the heel of this knife - so you can actually sharpen it, and as it wears, it will do so uniformly. You won't get one of those weird bump/valleys (like you do with the bolstered designs) that stirs the rage of a thousand suns within you, because that bolstered design is intended to just make you buy new knives. You can sharpen this one, over and over, and the edge of your blade will always meet the cutting board. It won't hang in the air like a suspension bridge from a steel pillar of useless, unsharpenable material at the heel of the blade. Anyway. Just by the d*mn thing. It's an awesome value for the money. Love the knife. Will be buying again.

Highly Recommended
Very sharp blade, very lightweight Comfortable handle and balanced. Helps with longer use to not tire out. Easy to clean and VERY reasonably priced. This is a Japanese style blade, very sharp and very thin, very easy to cut yourself with. Dulls faster The German style blades are a little heavier and greater angle, still sharp, but dulls slower

A Cut Above: Affordable Quality in Every Slice
As someone who enjoys spending time in the kitchen, having the right tools is crucial for a pleasant cooking experience. The Mercer Culinary M22608 Millennia 8-inch Chef's Knife has quickly become a favorite of mine due to its durability, sharpness, and affordability. Right out of the box, the sharpness of this knife was evident. It made quick work of chopping onions, mincing garlic, and slicing through vegetables and meats with ease. The high-carbon Japanese steel construction is truly a game-changer. It has stayed sharp through multiple uses over a few months, which is something I've struggled to find in other similarly priced knives. The quality construction doesn't just stop at the blade. The handle is ergonomically designed, providing a comfortable grip even during lengthy chopping sessions. The textured finger points are a nice touch, ensuring a firm, non-slip grip. I have a collection of knives, some of which are on the pricier side. However, I find myself reaching for this Mercer knife more often. It's become a reliable workhorse in my kitchen. I love the fact that it's a high-quality knife that doesn't break the bank. If ever needed, replacing it won't be a financial setback, although, with the way it's holding up, I don’t see a replacement happening anytime soon. Cleaning is also a breeze. A quick hand wash, a rinse, and it's ready for its next use. The manufacturer advises against dishwasher cleaning, which is a small trade-off for maintaining the knife's performance. In a market flooded with overpriced knives, the Mercer Millennia 8-inch Chef's Knife stands out as a valuable, high-quality option for both professional and home cooks. It's a solid knife that performs well, is comfortable to use, and has a price point that makes it a smart buy.

Quality knife, I dont like the pinch grip too bulky.
Good steel for a knife I needed a beater knife and Mercer and Dexter are great utility knives. I absolutely had that they come in blister packs I hate knives in blister packs I find that dangerous. Amazon shipped this is a plastic bag no a padded sleeve. That is very dangerous as it had started to come out of the heal of the knife edge. Great geometry and large belly for a knife that the package says is 203mm 8in. Ive never used this model that handle has a slick plastic mixed with a soft on the back and finger grooves. That feels pretty good. I was looking for a new knife to recomend to friends as I find the globals are not as good a value anymore. I believe this is the same steel or steel family CroMov. Pinch grip comfort is not ideal for me. I am surprised at the size of the flat belly something I prefer vs a rounded profile. f I would not have bought this knife had I tried it in the store. The feel in your hand. Victorinox has similar but smaller build. I think Ill add a 10in or 12in, At this price point these are I have the offset breadknife since Ive avoided adding one back into my kit for years.

Good quality at a great price!
I love these knives! I bought several of them, after I saw them recommended by the NYTime's Wirecutter. Reasonably priced, and "a cut above" others I've purchased. Sharp and durable. I highly recommend.

Hard to beat for this price point. Very sharp and comfortable to use, but you don't need to feel precious about them.

Great knives
Really great knife for a novice home cook. Beware- the 10 inch version, if you’ve not used one before, is really very large- users with smaller hands or who are less confident with knives may find this a bit intimidating. That said this is a fantastic knife with a useful handle, good edge and sturdy build. With the money you save buying this knife versus an expensive one, you could buy a honing steel or a whetstone and keep this workhorse razor sharp. The bread knife is no different- it’s won a few competitions and comparisons, for good reason. Cuts very easily, and strange as it seems, satisfyingly.

Good Mercer Knife
I bought this knife based on the reviews on the internet the grip is nice and more comfortable than Fibrox but let's see how the blade will perform at the end you get what you pay for I ordered the 9inch as there is no big difference between 8inch and this one update \ The knife was not sharp out of the box it struggled to cut tomatoes and chop some scallions so I needed to sharpen it with the whetstone
