I cannot more fully endorse Satisfaction4u and KitchenAid's KPRA pasta cutter set. Satisfaction4u's customer service is among the best I have ever received. The description on Amazon.com for the KitchenAid KPRA pasta cutter set said it included a linguini fini cutter. The box I received said "spaghetti" cutter. I was totally disappointed because I really, really, wanted a linguini fini NOT a spaghetti cutter. I contacted Satisfaction4u and described my problem. They went thru extraordinary means to satisfy me, but the problem was that all the new KPRA sets were only shipped with spaghetti cutters. After several emails and phone calls with Satisfaction4u, I am totally satisfied they did everything in their power to get me what I wanted. Unfortunately, KitchenAid changed what they are currently shipping/manufacturing to spaghetti cutters. However, surprisingly to me, this is not a bad thing. As long as I use thin sheets of pasta with the spaghetti cutter, it makes perfect LINGUINI FINI! This is what I want! For anyone considering the KPRA set, stop considering and order it now! It is totally fantastic! I have used several different hand crank pasta machines and extruder pasta machines. The KPRA set can be compared to driving a Ferrari vs. a skateboard! One of the most important aspects of using the dough roller with the stand mixer is you can CONCENTRATE on what is going on with your pasta dough as you roll it. When you are manually cranking (with manual machines), you lose track of what is wrong with your dough (is it too wet or too dry?). With the stand mixer powering the roller, you can quickly fix/troubleshoot whatever problem you are having with the dough. I made several batches of dough including 100% whole-wheat dough and they all rolled out and cut perfectly. My linguini fini was wonderful! I was concerned about the reviews that said the KPRA set had metal shavings and other debris contaminating them. KitchenAid must be reading the reviews because mine were absolutely perfectly clean. Just in case I was wrong, I took the time to run an entire loaf of white bread thru the set to ensure the roller and cutters were clean (a tip I read from another review). I inspected the slices of bread after passing them thru the machine and they were completely free of ANY contaminates. Also, I was concerned about the reviews stating that the cutters/roller used plastic gears. I am someone who really appreciates durability. I can unequivocally state that I believe the set to be extremely durable. At no time did the rollers ever strain or work hard to process my dough. I can see no reason why there would be any undue stress on the roller/cutter that would cause (even a plastic gear) to break or strip. The sheets rolled out progressively thinner without any strain whatsoever, as did the cutting operation. I expect the parts to serve me well for years to come. They are very well built. My only regret is that I didn't buy the KPRA set sooner. I absolutely love it and the product it produces. Satisfaction4u is a company I plan to use for years to come. I will seek them out for my future kitchen needs. They live up to their name--they satisfy the customer.

"It's the berries!"
November 9, 2011 I have a very old Imperia pasta machine that I inherited from my mother. I began looking for a way to speed up the process even though it is motorized. I thought with my KitchenAid K45 and a pasta attachment, I could save a lot of time by making the sheets with one and cutting with other since alone both the Imperia and the mixer kit require moving the attachments back and forth between rolling and cutting. I read most of the reviews and noticed some concern about plastic gears. There are apparently two kits with the same KitchenAid model number [KPRA] on Amazon: ASIN: B00004SGFS [...] does not mention anything about the gears; but, ASIN: B000KPULR2 [...] states that the gears are steel. Whether this is actually the case is not obvious, so I contacted a manufacturer's rep on their chat exchange. She was not able to provide an answer. You also have to note that the cutters are different between the two. I wanted the one with the spaghetti cutter, and the prices are the same, so I ordered the latter. The kit arrived day before yesterday, and I noticed that it has a 5-3/4-inch roller/cutter width, whereas my Imperia would produce only a 4-inch width sheet. So, instead of using them both, I used the kit to roll out the sheets first and stacked them with plastic wrap in between. I then switched to the cutter and ran them all through at the same time. The batch I made up in just a few hours this morning was with a dozen eggs, which is a LOT of pasta. The KitchenAid KPRA [ASIN: B000KPULR2] performed flawlessly. Whereas the Imperia's motor had only a single speed, the mixer has ten, although anything above about three is difficult to manage. Also, the KitchenAid mixer has a much more powerful motor and performs effortlessly where the Imperia's motor labors. The KitchenAid is a LOT quieter also. Some reviewers had trouble with the noodles sticking together. This is because the dough is too wet or the surface of the sheets is too moist. Mixing the proper proportion of flour with the eggs and/or keeping the sheets well-dusted with flour solves that problem. First roll the sheet through thickness #1 and then fold in half lengthwise. Put it through a second time. Repeat the folding and rolling again until you have a roughly rectangular shape. Dust both sides liberally with flour and reduce thickness to #2. Repeat dusting and reducing until you reach the desired thickness. The spaghetti cutter forms a round noodle, so don't reduce it further than #4. I have not tried the flat noodle cutter yet. Bottom line: Based on the first use, "It's the berries," as my Italian mother would say, so I am well-satisfied and would recommend this kit to anyone interested in home-made pasta that is easy to make. Update, November 24, 2012 Finally got around to using the flat noodle cutter. It is really too wide for my taste, since the noodles expand as they cook. They end up about 3/8 inch wide. Also, I used a #5 setting on the rollers for the thickness, and it turned out to be a little too thick, so next time I'll go with #6. You will have to experiment with different settings to get them as you prefer. Tried to find a cutter with a width between the spaghetti and the fettuccine, but Kitchen Aid doesn't offer one.

Pasta Roller Review
While I've owned a Stand Mixer for a year or so, I never thought of making my own Pasta,I remember all the work my Mom use to do making her own with a Manual machine. Then a friend of mine got the set for a birthday present. So my Wife & I went over his house for dinner to see how it worked, I ordered mine the next day. Very easy to use, The dough roller is the greatest and I've even used it to roll the dough out for making Raviolis. The key is in mixing up the Dough. I use 3 Cups Flour to 3 large eggs with a tablespoon of water, I 'borrowed' this off somebody on You-Tube and it hasn't failed me yet. The Kitchen-aid Recipe just doesn't get it, The dough comes out too wet and then you're forever adding flour to get it just right. HOW IT WORKS Step 1 You Attach the Rollers to the Mixer, After of course Mixing your Dough in the Mixer Bowl. Start the Mixer on Speed (2) Then you tear of a chunk of dough, flatten it out with your palm. Make sure the Rollers are set at (1) and feed your dough thru, Fold in Half and repeat about 4-5 times, Then set the Rollers to (2) and Feed once or twice Then Set Rollers to (3) and Feed and so forth until you are satisfied with the end result. I'd highly recommend getting the pasta rack to hang the sheets of dough and also the cut pasta once you get to that point, It beats laying it out on the counter and it's cheap enough not to break the bank. Norpro Pasta Drying Rack Step 2 After you get all your dough rolled out, It's time to cut it. Remove the Dough Roller from the Mixer and attach the Cutter of your choice. Spaghetti or Linguini - Attach it to the mixer and turn on the mixer to speed setting (2) - Feed your dough sheet thru and out comes Spaghetti/Linguini noodles. Throw them in a pot of boiling water for 2-3 minutes and Bon Appetite. Step 3 Never Clean the Rollers with Water -- Basically if the any hard dough left on, It just falls off if you shake it. The only thing I don't like, Is I always forget to reset the roller when starting to roll a New piece of dough. Too bad they don't have some kind of automatic reset. For those that don't know what I mean, You start by feeding your dough on the widest roller setting (1) and work your way up. Setting (5) is usually fine with me, But it does go all the way to (8) I believe. All in All it takes me about 45 minutes to make up a batch of fresh pasta, And that's with letting it sit in the fridge for 15 minutes after mixing. I made a batch last night that I thought was just Ok, My Wife kept saying how fresh the noodles were and what a difference it was over the dry Box Pasta. So I guess that's good enough for me.

I'm very pleased with this product. I made my first edible batch of fettucine with it the other night (after a practice run), let it dry on a baking sheet and stored it in the fridge in an airtight container overnight. I cooked it the next night and was surprised at how good it was. Perfect texture. The noodles only took about 2 1/2 minutes to cook, even after drying a bit. A couple of things to keep in mind: The first batch of dough you work through the machine is a throwaway. There are some type of oil from the mechanism and little shards of something that get into the dough the first time you use it. It's sad to waste good flour and eggs, but there was no way I was going it eat dough with black smudges and flecks on it. When I made my second batch, it was all good and clean. Second, I did not like the recipe for basic pasta dough in the booklet that came with the machine. Too much flour for the amount of eggs. And I kept having to add water, quite a lot, because the dough was too dry to come together in the mixer bowl. I also did not like mixing the dough in the KA mixer. The machine seemed to be working too hard. For my second batch -- the one I ate -- I used Marcella Hazan's basic recipe (1 cup all-purpose flour and 2 large eggs, and 1/2 tsp. salt) and hand mixed and kneaded. That recipe resulted in beautiful, smooth and shiny lengths of dough that cut perfectly (cutter attachments are fabulously sharp). It tasted wonderful and had "bite" when cooked. Next time, I'm going to try mixing and kneading the dough in the food prcessor a la Mark Bittman's instructions. The best thing about the motorized rollers and cutters is that I had that "third hand" I so sorely needed when I had a hand-cranked machine. I never mastered that machine because I needed an extra hand to guide the dough at both ends while I cranked! The motor fixes that problem nice and neatly. It is also easy to clean with the included brush. I had very little flour that needed to be dusted off the rollers and cutters and no dough stuck to it, so that was great. I'm planning on a lasagna bolognese party soon!

Makes pasta rolling a breeze
I have used this a couple times since I purchased it to make linguine. Very easy to use and much easier than a crank. Home made pasta is much better than the fresh pasta you can get in the store. The 3 rollers are: - roller for making sheets (for ravioli, lasagna or for running through the other rollers) ---start here and make the sheet thinner and thinner until ready for the other rollers - roller for making linguine in various thicknesses - roller for making fettuccine in various thicknesses The rollers do not go in the dishwasher, must be cleaned with the included brush. It is no fuss, I clean with the brush when I am done and then again later. There are basic recipes included in the instructions, so no need to buy a book until you are ready. Most homemade noodle recipes involve eggs, very few with without. If you are vegan you would struggle to find an assortment of recipes to work with. It is important to get the dough to the right consistency, too wet makes the process too tedious. Semolina flour and white flour absorb different amounts of water so you will need to use the recipes specific for the flour you are using. You do not need to buy a drying rack, you can just make loosely folded bundles of it as it comes out of the maker and place in the refrigerator for later use. Some of the recipes warn that with eggs you should not leave out - so I don't know how one actually uses the drying rack. All and all something fun to do with tasty results. It still takes time to do and I have not used it as much as I had hoped. But great product and a nice feature to have with the KitchenAid.

one excellent product
I am not the type of person who normally writes a review for a product but find myself doing so in this case. Although experiencing some initial trepidation based upon the few negative reviews of the pasta roller I nevertheless proceeded to purchase this product and tried same for first time today. All I can say is where have you been all my life. This is a first rate product which is worth every hard earned penny paid for it. The roller takes the dough and swiftly and effortlessly rolled it out to the desired consistency whereupon the cutter shaped the dough into the desired pasta. Both of these items worked without a hitch and produced some of the best pasta I have had in a long time. There is truly nothing better than a homemade spaghetti. The only downside appears to be that the roller and cutter are not dishwasher safe but they nevertheless clean up with minimal fuss. If there were more than five stars I would have awarded more. If you are sitting on the fence deciding whether to buy this attachment wait no more. Finally, obtain a good price as this item appears to fluctuate and try to purchase when a rebate is offered as this takes some of the sting out of the price.

Works Great Right Out of the Box for Us
Husband and I tried it right out of the box. (It was a fun project together...and then we happily ate the results!) First, we made sure to look for any bits of metal, etc. Saw none. Brushed roller a bit, just in case. We made the Light Whole Wheat (included in the manual), only used the press, not the other cutters. We wanted a thin, very wide noodle (about an inch wide or more) so we let the press make them very thin, then cut them ourselves with a knife. YUMMY! We boiled some and we froze the rest for later use. BTW: If dough seems like FAR too dry, just add a slight bit more water as you do the final hand knead. Not too much water. Easy as you go. You still want it a bit dry. (We also have hand-crank pasta maker. This should get lots more use because it sets up so easily and using mixer to quickly blend the flours seems faster/less messy.) After eating homemade, light, feathery fresh pasta, I wondered if I would ever buy pasta at the market again. Fresh and clean makes you wonder why we all ever got so busy that we forgot to make OUR OWN food.

Se ti piace la pasta fatta in casa questo accessorio ti cambia la vita, la sfoglia si tira benissimo e si fa presto, ci sono 8 spessori possibili per tutte le esigenze, al livello 8 è sottile come un velo ideale per paste ripiene tipo tortellini. Prima usavo la macchinetta a mano ed avere tutte e 2 le mani libere e la macchina in alto è una comodità incredibile. Nel kit ci sono 3 accessori per la pasta, quello per tirarla, quello per le fettuccine o tagliatelle e quello per tagliatelline sottili che nelle istruzioni chiamano spaghetti. Fare la pasta con questa macchina è un vero divertimento. Il prodotto è made in Italy. Solid piece of equipment!
I highly recommend this attachment. This attachment is very well made (Made in Italy). It attaches, detaches and cleans up easily, and most importantly, it works very well. This device only makes flat pasta so if you want rigatoni or penne, you'll be disappointed. I've made fettuccine and ravioli. After you've eaten home made semolina pasta, box pasta will never measure up. Be aware that making fettuccine is not that difficult but fresh ravioli is another story...it's quite a bit of work even with this machine. Making the filling and stuffing and sealing each ravioli is laborious. However, prior to getting this device, I used to use a hand crank machine. That's just way too much work. These rollers make the job manageable. The roller makes very consistent pasta, even when you use the thin settings. My suggestion for a good pasta recipe is : 2 cups Semolina flour 1 cup unbleached flour 3 eggs ½ teaspoon of salt 6 tablespoons of water (most recipes say 3 but that just doesn't work well.) *Some recipes like the one that comes in the box with this attachment, recommend the use of oil. I have not tried that approach yet. It probably works fine too, you be the judge. ** Some process advice: mix the 2 flours in the Kitchen aid bowl using the paddle beater. Mix the eggs and water together with a whisk and slowly add them to the mixer while in motion on setting 2. After the big, kind if hard dough ball forms, stop and change over to the dough hook for a couple of minutes. If you make ravioli, you'll want flexible dough or you'll get cracking. If the dough cracks or if air is captured inside during the sealing process, they are garbage as they will come apart in the boiling water. To get dough flexible enough that it doesn't crack while making the ravioli, be sure to cover the dough between the first and second rollings and not let it sit longer that 30 minutes. Here's where the oil recipes may have an advantage...also, a light coating of water will help make a good seal. I also picked up the Villaware 10-Square Ravioli Maker from Amazon. It is a metal and plastic form that helps you make 10-2.5 inch square rav's at one time. It works well but 2.5 inch rav's are a bit small. You will also have a tough time getiing a sheet of rolled pasta out of the rollers that is wide enough to cover the form as the rollers are close to the same width as the form. Good luck!

Une qualité de fabrication irréprochable, le poids ne laisse aucun doute sur la solidité des matériaux utilisés, et c'est comme on peut dire l'investissement d'une vie :) Cet ensemble d'accessoires à pâtes (laminoir, linguines et tagliatelles) est simple à utiliser. Chacun des accessoires utilise la force moteur du robot Artisan, et c'est à différentes vitesses selon le modèle de pâte choisi, que vous verrez sortir ces pâtes fraiches comme par magie ! Il sont simples à utiliser, également simples à nettoyer, mais ne devront jamais être mouillés. L'utilisation est vraiment enfantine, il faut prendre son temps, le mode d'emploi est clair et le résultat est sans surprise, parfait, voire surprenant ! Quelques recettes de pâtes vous seront proposées dans le mode d'emploi. Les ustensiles à raviolis, ou à pâtes creuses de chez kitchenaid seront les compléments parfait de cet ensemble, une fois que vous les aurez tous, vous pourrez confectionner un grand nombre de pâtes différentes. Easy and satisfying to use. Full process described below!
I have never made fresh pasta before, but did so last night, and it was unbelievably easy and satisfying with this pasta attachment! Making pasta dough turned out to be very quick (using a simple recipe from the BBC Good Food website, using 5oz / 140g 00 flour, one whole egg and one egg yolk - although there are several recipes in the instructions themselves, which I didn't read..!). I made the sauce while the pasta dough briefly rested in clingfilm in the fridge, and then it was ready to roll out. You slot the roller attachment into place on your KitchenAid stand mixer, couple of twists to screw it into place, flick it to speed 2 , and you're ready to feed the dough through it. I rolled the dough in 4 separate go's, otherwise it would get too long to handle. The next trick is to keep folding the dough and rolling it through the widest two settings to make it silky smooth and into a rectangle shape. I can see that with a hand cranked pasta roller this would be a real pain to do, and you'd most likely need someone's help to either feed the pasta dough through, or to hold the roller down and crank the handle. With the KitchenAid attachment the roller stays firmly in place, and constantly rolls automatically so you just have to drape the dough through and collect it with your other hand. I can't explain how easy this was. The next stage is to crank the rollers thinner and thinner and roll the dough through each setting. To do this you don't even have to stop the machine - you just gently pull the nob and turn it to the next position. I stopped rolling at setting 6 (of 8) to make tagliatelle which worked well. Setting 7 was a little thin (but would be perfect for ravioli). The final step is to hang onto your sheet, change the rollers (which is simple and fiddle-free) to the tagliatelle cutter. Then simply feed the sheet through one last time. Out came strands of fresh home made pasta, like magic. So satisfying to watch. I hung the pasta out to dry on the KitchenAid drier (great product) but I understand it's equally find to put it in little piles. I found the TINIEST bit of flour over the strands was useful to stop them sticking to each other. Then literally 4 minutes in boiling water, and it was ready to eat. The results were great. The pasta was tastier and chewier than either dried or the fresh stuff you can buy in supermarkets. I will definitely be doing this again, and look forward to trying different colours and flavours of dough. Looking back, I realise this review is more about the dough, but perhaps that's the beauty of the KitchenAid attachment - it works so well and easily that there's not much to say about it! Wonderful bit of kit, quality product, and so easy to make some poncey home made pasta to make you feel smug.
