Do you think it would be possible to change the suggested layout to more in portrait and less landscape? Most of my photos are portrait (vertical!)

I don't think so. It took quite a while to put together and is very heavy when complete. If you tried to change the layout it may become unbalanced, also all the holes are pre drilled so it fits together like a jigsaw.
