Does this work with a iPhone 12 mini?

This is a credit card holder with RFID. I don't know what an iPhone mini is. If it's a phone then no, it won't work.

Will the colour rub off the outside?

The colour will not rub off. If the card holder is scraped with a sharp object then the colou will be scraped through to the metal.

can I only use one card or do I need to use multiple cards?

You can just use one card. My Husband does if needed.
