Q: How old is this balsamic vinegar?

This is giusti's least expensive offering. In the old days they might have called it a 5 year old. But that was outlawed in Italy quite a while back.In June of 1999 the Italian government made it illegal to put the age of a balsamic on its label. All balsamic Vinegars exported out of Italy after that decision no longer claimed an age designation. This was due to the fact that it was inaccurate. The age of a vinegar is only part of what makes a production balsamic of high quality. The percentage of must in the starting blend is possibly an even more important factor. If you age cheap red wine vinegar for 10 years, you still have cheap red wine vinegar (only slightly better perhaps) Also, virtually all production balsamic vinegars are aged using some variation of the ~Solera~ method in which vinegars of various years are blended, so that vinegars being described as 10 year old only contained a small percentage of actual 10 year old vinegar. Giusti now rates their main balsamics as 1, 2, 3, 4 04 5 Medals going up in quality. Premio would be below the one Medals and is basically their lowest grade (though good for the $)
