Incredibly Sharp—But Brittle
This is a sharp ceramic paring knife which cuts through foods easily.— THE BLADE —I ordered the all white knife (handle and blade). The handle is plastic, and the blade is made of proprietary ceramic. The knife is razor sharp and will easily cut through foods like fish and meat (not bones!), and other soft foods. Because of the chemical structure of the blade, it makes it unaffected by juices, oils, salts, and other elements. It also will never rust.if you need to sharpen it at some point you should get the Kyocerca Advanced Ceramic Electric Diamond Knife Sharpener, which is made just for these ceramic knives.— THE BRITTLENESS —Now comes the downsides of having a ceramic blade: it's brittle. You can't have something incredibly strong without a weakness. Steel has a weakness: moisture. Even Superman has a weakness. Please handle this knife and blade carefully. If not properly handled, you can easily nick or crack the blade. Be careful of what you are cutting because you will ruin the blade if you cut something hard that you aren't supposed to. You *must* hand wash this, and do not just toss/throw it in the sink! Dry it separately from your flatware, and store it in a separate drawer (I store mine in a delicate kitchen utensils drawer).This is a great paring knife that is well designed, and is very sharp. Recommended.

Great cutters
These work extremely well for cutting. They do chip over time, but continue to work. DO NOT BEND OR PRY WITH THEM. They are brittle.

A great knife with a couple of caveats
I've had this knife for about a month and it is beautifully sharp. It's VERY light. It's great for vegetables and fruits because there is no resistance and you can make clean, thin, even slices. The blade and handle are easy to clean. The orange color of mine is great, and the color makes it easy to find in the drawer. This was my first ceramic knife and I plan to acquire another few.I would have liked to have given this 4.5 stars because of these issues:This knife really shouldn't be lying freely in a drawer with other knives because it can chip, but it doesn't come with any covering. I have much cheaper steel knives that came with a little plastic cage to go over the blade so would it be that difficult to provide them with this knife?The handle, while sleek and easy to clean, doesn't have that much of a gripping surface so it would be easy to drop. That's a drawback when dropping it could shatter it. It's also a drawback in that this would be perfect for people with arthritis because the knife is very light, but those people probably would like a better grip. Maybe Kyocera could team up with Good Grips?Some others have been critical of the fact that it shouldn't go into a dishwasher. I know of no serious cooks who put food preparation knives in a dishwasher. This is no different from any other good knife that way so I would not consider that a drawback.It will not replace all of your steel knives; it cannot be used with bone-in meat or anything super hard. There is no flexibility and you could break or chip the blade.Overall a great knife, although not totally perfect.

Best knive ever
One of the best pairing knives I’ve ever used. I have the butcher size if this brand too and it’s amazing. They cut all your foods like butter!
