Any idea what the correct sharpening angle is for these knives (15 or 20 degree)?

you are more likely to cut yourself on 15-deg. 20-deg would usually be less sharp.

do the blades bend when you hold them?

The blades seem very good! No, they do not bend, so far. They are VERY sharp!!!

14.6 is that the height of the block with or with out the knives in it, my current knife set is 14 high with the knives in it

Counter to top of tallest knife handle is 13.25 inches

The set of 14 appear to be stamped rather than forged. While all sets appear to have a full tang, only the ones with a bolster will be forged. The chef’s knife, from the set of 14, is thinner towards the edge of blade which makes for easier slicing. The set of 9 is really excellent value.
