As long as you go slowly and the drill is a decent one you shouldn't have a problem we did ours no problem

Yes, it is replaceable. And this set include 2 mandrel bits to replace conveniently.

Can you use two of the saws together to make a hole larger?

No, you can only attach one saw at a time to the spindle. If you mean, could you create a hole with on then enlarge it with another, it would be difficult as the central drill bit guides the saw and without something for that to bite on, there'd be no guide and the saw will slip around.

Will these drill through 22 mil ply wood

YES. Maximum depth is about 25 mm.
