Is this knife good for removing silverskin?

It might. I use a paring knife to do that. More control, at least for me. I typically use this knife for cutting up a whole chicken, cooked or raw.

What steel is it (astm number)? please do not answer "high-carbon steel". thanks.

It's advertised as proprietary blend of high carbon and stainless according to their website. No ASTM is given. Ask them.

How many units comes? 1 knive or 6 knives?

Just 1, well worth the price for the quality, it is inexpensive
