Will it tip over if have just on heavy pot on it

Not sure why you'd want to buy this rack for just one pot, you'd be better off with one of the single sided ones, but I placed my heavy cast iron pans on the bottom and have my lighter non sticks up higher, going from lightest to heaviest top down and notice almost no sag or leaning.

If you have this rack...do you think it would also make a good paper/foil box organizer? Cant find a strong adjustable box rack.

It would probably work for that. I liked the product but it just did not fit under my cabinets the way I needed it to in order to organize my pots and pans.

do racks tilt and pans slide off?

No sliding off, it tilts a little as my pots are not equal weight on both side, but it doesn’t fall to one side
