Do you think this would work well when reconstituted to brush over the tops of bread before baking, like fresh eggs do?

Accepted Answer

Yes. I made a meringue with this stuff and it worked nicely. It would also work as a glaze, but like the others said the powder can be lumpy when liquid is added.

will this work for royal icing? any one have a recipe using the dried whites?

Accepted Answer

It will work. The quantities are on the package: 4 teaspoons dried egg white powder, 1/4 cup warm water, 1/4 teaspoon cream of tartar, and 3 cups powdered sugar. (Beat everything but the sugar until stiff peaks form, then add the sugar one cup at a time mixing on medium until combined.) You can search the web for royal icing and dried egg white powder to find other recipes. Note that dried egg white powder is different than meringue powder, because meringue powder (unlike this product) contains sugar, so don't substitute this for meringue powder, which you'll see in many recipes.

Can this be beaten into a peak?

Yes. Follow the directions on the package to reconstitute the egg whites.  Then add a  a bit of cream of tarter while they are mixing so they keep their peaks.  Keep in mind...two things to do in selecting your tools when beating egg whites:  Make sure the bowl and mixer blade has no fat, oil or detergent on them. Use a metal bowl as fat molecules can accumulate on the side of a plastic bowl and inhibit your egg whites from peaking.  (A common problem is accidently getting some yolk mixed in, but since you will be using pure egg whites, this will not be a problem!)

Can you use this to make like an egg for n  English muffins or is it only for baking and smoothies?

Not as good as liquid egg whites are as easy for eating for omelettes or stirfries for fresh food. Needs to be heated with a hot liquid and whisked thoroughly .possibly better for mixing in with oatmeal or hot cereals for extra protein
