Is this a one touch adjustable for all four wheels or do you have to set each wheel individually?

One light touch adjusts all 4 wheels.  In my opinion this is one of it's best features.  You can adjust the wheels very quickly and with very little physical effort.

what is the height of the handle?

There are two positions that the handle will lock in place and they are numbered 1 and 2.   Number one is for short people like me and it is 40 inches from the ground to the top of the handle.  Number two is 4 inches higher.

What is the cutting deck (the area under the mower above the blade) made out of?

plastic. I also owned a black & decker hog mm875 and my deck has holes in it. That is a big factor in why I am not spending the money to fix it up & try to keep it going after 5 years of use--- cheap plastic parts. The cheap plastic-foam handle grips ripped the first time I used the mower. The plastic fan & a plastic, square piece called the 'blade insulator' (that is a sort of big plastic 'washer'/spacer that attaches with the blade) also broke. The plastic handle- push mechanism also came apart & I had to rebuild the parts holding it on... and it feels so cheap I don't trust it, so I don't want to put any money into fixing it up to keep it going. I could have just replaced the motor brushes, wheels, fan, blade, plastic blade insulator, knob (that screws on the handle), for $77 through an online parts store and tried to keep it going for more years, but the number one factor that ultimately decided me against it, and to just toss it after 5 years instead, is all of the cheap plastic parts that I felt were too fragile.

My lawn is pretty long and thick... would this mow through easily?

First time through would be a little hard and I would surely use the bag and empty it frequently. Start off on the highest setting and work your way down. Don't let it grow that long again. I use the bag most of the time as I have places that need filling and composting grass for dirt is cheaper than buying dirt. Hope that answer helps you. I mow over and acre with mine. I learned it's best to use a 23 gauge extension cord if you're mowing that much so you don't burn your engine out but not with this machine. I burned the engine out of another one after 8 years of use. Not bad. It was black and decker too. I was using 14 gauge cord, 300 feet of it. Not a good idea with 14 gauge. Have fun, be happy and laugh often. Smile while you mow. It makes it much easier.
