Fines Herbes are Very Strong
I remember using fines herbes in the past and don't recall them being quite this scallion-y. The overriding flavor is chives, though the tarragon is also noticeable. I would recommend a very light dusting on a baked potato (along with your butter or cream or margarine) or to use this mix in stews, soups, or on meats. Personally I think it's too strong for poached or boiled eggs, and while it could do on an omlette, I would still prefer fresh parsley on scrambled eggs.

Hard to find, delicious herbal seasoning
Fines Herbes is very often confused with Herbes de Provence, although they aren’t the same at all and taste very different. My favorite use for fines herbes is in an omelet or egg scramble, and on roasted baby potatoes. I’m so happy I found this after a fruitless search in my local supermarkets.

This Herb Blend is Gold in My Kitchen
I used to purchase the Frontier Co-op Fines Herbes in large quantities but for some reason they no longer sell it???I was forced to purchase this blend as it was the only one available and I am quite pleased. I use these herbs in just about everything and they are especially good in omelets with Creme Fraiche. I purchased two bottles last year and I'm back for another one. I just wish I could get larger quantities. I may have to make my own blend as another person mentioned.

This is a nice softly scented spice for vegetables and other dishes. I found the price to be very fair and the quality to be excellent.

Good and Fresh
I have used other brands of this herb mixture; of same quality. While I like this company's blend, it smells strong on the tarragon side. If you are not picky or have never used Fines Herbs, then buy it! I recommend this item. It is good. I just prefer the brand I grew up with that has a bit milder tarragon, more balanced blend.

Not to be confused with Herbes de Provence. I like this mix with fish or meat or vegetables.
