Review: Write in the top - The content of the book is very informative. What I don't like is, there's a name of a library where the book came from. It's look like I stolen somewhere. Review: Book is missing text - Book overall is quite good. Has a lot of useful information. Unfortunately this book wasn't quality checked. I just noticed in the instructions for making a basic ganache, steps 2 and 3 are missing. The step numbers are there but the text is blank! Oh well, the return window has now closed but I am very disappointed. I'm not sure if there is anything else missing, will go through the whole book and check. Shouldn't have to do this though.

Clear instructions that work!
Some of these 180 recipes are pathetic e.g. “coat a fruit with chocolate” only serves to pad the page count. No one buys a cookbook to tell them that you can dip a strawberry in chocolate. It’s insulting that I paid for such a recipe. Other recipes clearly have not been proofread, such as the chocolate and Yuzu dessert, it’s missing instructions and never tells you when to combine the chocolate. They couldn’t afford an editor? I thought this was an international school. Generally speaking the instructions are good enough to follow and succeed at the recipes, so this is a good book for beginners. The Ferrandi chocolate book has more appealing recipes to me, but much worse instruction, and Ferrandi sets you up to fail. Some of those Ferrandi recipes took me five tries to figure out what they weren’t telling me. With Le cordon bleu I’ve gotten them correct on the first try.

Finally a metric version of this book
Finally a metric version of this book! There are so many great recipes in this book and now they are made easy to understand and follow. I had the old version in cups and tsp...i was going crazy. The book covers almost everything, from cakes to tarts, from mousses and creams to iced desserts and sweet drinks. Interesting the part about chocolate decorations, even if now we can find it in so many books about chocolate. The book may be not for beginners, but the recipes are very well explained, and all the dessert i tried turned out great
