Will this clean and polish gold coins? Will they shine like new?

I have only used these on silver coins, but would expect it to work equally well on gold coins. Keep in mind that cleaning your gold coin may reduce the value of it. Also, don't expect them to "shine like new".

Does this type of cleaning effect grading on silver dollars?

ANY cleaning of a collectible coin will reduce its value. The only reason to clean a coin is … never. However if you have something silver that you only want to keep clean and bright this product will do it.

Is this safe for gems or stones on jewelry?

Yes it is safe for the majority of gemstones. Do not use it on soft or porous stones like opal, turquoise, pearl, etc., as it can take away the luster.
