This 26 inch professional quality flax linen baker’s proofing cloth can be used to proof baguettes, ciabatta, batards and other elongated loaves after shaping and during the final rise. It can also be used to proof artisan-style crusty dinner rolls. The baker's cloth, also known as a bread proofing cloth or baker's linen, is made of 100% natural flax linen that has not been treated with any chemicals. Easy to use. Just dust the cloth heavily with flour before each use to ensure the dough doesn’t stick to it and bring the folds up between the shaped loaves to help hold their shape during proofing. The baker’s couche measures 26 x 35.5 inches which is ideal for use on larger work spaces, counters and tables. The finished length is just shy of a yard which provides ample room to proof several loaves at a time. The couche can be rolled up for easy storage. Important - A couche should not be washed. Bakers Couche
I really liked it, but found it a bit more difficult to manipulate than what I had used in past, which was a dish type cloth. I like the strength of the fabric and the ease of cleaning (what's not to like about just brushing off the flour). I think my difficulty in using had more to do with the increased size.

Must have for proofing yeast breads
This couche is great for proofing yeast breads and a must have if you bake this type of bread regularly. This made a SIGNIFICANT difference in taste and appearance when compared to proofing in a kitchen towel, or on a countertop.The cloth itself is large enough to proof 4 to 5 fifteen inch baguettes or about 3 ten inch boules. the fabric is great quality and does not have frayed edges like other manufacturers. it will take about 1/2 to 1 cup of flour to work into the cloth initially prior to your initial proofing and minimal flour after that to maintain.Never wash the cloth. And DONT use it with breads that have a high amount of fat or oil content - the bread will stick to the cloth and is a pain to remove.I found useful videos on use and care of a couche on Youtube via BreadTechnique.

Versitile
This product works very well for proofing, it is tough and durable and very large. It works for many types of bread recipes.
