These don't resemble old-fashioned shortbread--they're delicious, but not buttery and rich, as shortbread is. BUT they are my go-to cookie if I need a substitute for a graham cracker crust or for a recipe that calls for butter fingers. I make a marvelous sugar-free chocolate pie, and I grind up these cookies to make the equivalent of a graham cracker crust. It gets rave reviews from everyone, including people who don't often opt for sugar-free desserts.
