Hi interested in purchasing this product but just one question. Is this organic?

It's from India & is not USDA organic.

Can this flour be used as a substitute for coconut flour - probably not 1:1?

This flour if very nice; I doubt it could be a substitute for coconut flour and surely not one to one. I use it more than coconut flour as coconut flour is so very absorbent my things tent to taste too 'eggy'. Incidently, I don't think it's WATER chestnut flour! Just regular chestnut flour.

Is this 100% pure water chestnut flour? I am looking for 100% pure. Cornstarch, tapioca starch, wheat starch, potato starch are too chewy cooked.

It is pure as the only thing mentioned in the ingredients is Water chestnut

What does this flour taste like?

I am not sure as I have not tried it personally. But I know that people use it for fasting in India so I suppose it's dense. Also good with Gluten free & paleo cooking although it is processed in a machine that has processed wheat & tree nuts. Hope this helps!
