can you make jerky?

Yes, and it is easy.  Watch for meat, roasts and lean steak, to go on sale. (I used a rump roast recently.)  Chill it to almost freezing to make it easy to slice.  Trim ALL fat you can.  Slice as thin as possible.  Put the slices in a bowl with the marinade. A mix of soy, Worchester sauces, black pepper and a dash of red pepper works well.  I like to let them soak up the flavor overnight but a couple of hours does fine.  Spread out the strips/slices on the racks and turn on the machine.  If you have sliced pretty thin, it will be done in 4 to 5 hours,  longer if thicker.  Pretty simple.  Good luck.

Does this unit come with everything I need to dehydrate food? Or do I need to buy trays or whatever?

It comes with 4 trays. That was plenty for me to do 5 bananas sliced in my first batch and 2 lbs of strawberries in the second with still plenty of left over room. I've only used it twice ('Ive left a review under Energy, and there is a superb review on marinating that I saved, printed out and use, that I recommend  By SANDRA J BALKE ), but unless you plan to make fruit roll ups, or make huge batches (the 5 bananas was considered a huge batch to just me and my daughter), then what it comes with is perfect. People who have big families might buy the extra trays etc, but I recommend buying it as it is, trying it out, and see how it works for you before spending the extra money, that's what I have done, and it works great, we're doing apples tomorrow :)

Everybody mentioned fruit roll up. What about drying herbs or hot peppers ? Has anyone tried that? Thanks :)

We have dried just about everything in ours.  With herbs keep a close watch on them they dry quickly. We have also done cherry tomatoes and peppers.
