do you think it would go through (2) 1/16 aluminum sheets at once? putting both pieces in together

1/16 x 2 = 3,175mm (sorry, I am Russian ;) ). No, it will not. The reason is very simple - the gap between the hole and the punch is about 2 millimeters (at least in my exemplar of the tool). So, two sheets of 1/16 will not go in.

I don't see the psi requirements. will this flange 18 gauge sheet metal with a 110 psi portable compressor?

Just tested mine on 1,2 mm (18 gauge) mild steel (ink-jet printer frame :) ), it does flange it. However, the ledge on the lips is about 1 mm high (that is less than 18 gauge metal thickness already) and the ledge height on the actual flange is about 0,8 mm only. So it will not give you a smooth joint (1,2-0,8=0,4mm reverse ledge). But it makes holes in this steel easily.

It works 18 gauge well that's the thickest.
