I have purchased the item: a pair of gigabit ethernet single-mode sc fiber media converter. which connector type is needed: sc upc or apc?

Most GbE transceivers in my experience for local data networks are LC, not SC. Check that first. Anything newer than 10 years or so will probably be UPC for the fiber end grinding. The fiber connector end grinding type should match the transceiver requirement (SC or LC and UPC or APC). Mine are LC/UPC.

I need to run internet from my exsisting home to garage will this work?

You will need to run a strand of single mode fiber between the 2 converters. If you can run a cat 6 cable that is less than 330ft that would be simpler

Will this allow my to bypass a modem and plug directly into a mesh home network?

That question doesn’t make sense. This coverts YOUR fiber cable to Ethernet on both ends. This will not allow you to “tap” into existing fiber.
