Dry thoroughly with a paper towel while the pan is still warm. If the pan is still relatively new, return to the stove top and wipe the interior of the pan with a small amount of oil, heat until smoking. Then, using tongs, wipe off the excess oil.

Probably regret this purchase
To start with the good points, the pan has a high thermal mass, which is good for browning. Yet its not to heavy, you wont be tossing flambé style with it, but if youre a manly man it wont be too difficult to handle. It takes a lottle getting used to, cooking on a heavy, sticky pan like this, but it has its uses - like creating 'the bind' albeit you cant pit anything acidic init as it strips the seasoning - so you wont be making many sauces. My pan hasnt warped like some claimed, and the seasoning process needs some dedication (5 times in oven for 2 hours) and i wrecked the coating with a can of tomatoes - so then i did it once in the oven and then have let the coating build from normal use... im getting used to cooking with it... sausages and eggs work well.The negatives are that for 100 quid for the 10 inch pan, i do feel like a bit of a mug. Its small... ok for a small meal, but you wont be having dinner parties stood around it. I think for the money you could do better with a large high quality stainless frying pan, albeit it might lack the thermal mass. I think the biggest regret is the look of the thing. It doesnt look like a slick racing car as some have said... it looks like crocodile dundee's antique pan. It may appeal to somes sense of aesthetic, but it doesnt really fit in my household. The handle stays cool, but it looks actually quite cheap and utilitarian. Functionally i like the handle ergonomics and the radius on the inner part of the pan... but its just a small, ugly, expensive pan. I think I may get a de buyer pan and see if i prefer that. Like i said, might appeal to a rugged manly type, and perhaps the larger one looks nicer.

Goes rusty
I bought this 26cm Aus-ion skillet as I already own the larger version, and have never had a problem with it. This skillet goes rusty in contact with water, if left a while before oiling it. I think this is un-acceptable but the postage to return it was approx £75. Almost the price of the skillet. I declined as Amazon says they will pay up to £20 for contribution to posting charges.This skillet must have a fault as I have never had a problem with rust on my larger one. What am I supposed to do here?Regards, Roger Hammond

Great present
Thought this as a present for my son and he loves it. He says it makes the best omelette and pancakes ever. To clean it it just needs a simple wipe. It's very solid but perhaps rather heavy for someone who is frail.

not good
Bought this but was only supplied with basic instructions re oven seasoning (which I now understand is to prevent rust). First few attempts at cooking resulted in lots of adhered food. Contacted vendor who sent me a list of instructions not previously seen-with how to carry out the all important stove top seasoning to develop the non stick surface. Key points were to use plenty of oil when cooking, and not use excessively high temperatures. In a nutshell, the pan has had at least five seasonings, each one involving 3 applications of flax oil which is rubbed in till smoking-allowed to cool, then repeated-all to no avail. Reason for posting is I decided to give it another go tonight as I was making Spanish omelette. As anticipated, some omelette base adhered to pan, although the omelette did actually leave the pan when I flipped it onto a plate. Again as anticipated cleaning the pan was a nightmare (and BTW it didn't look too easy in the video link provided-they'd done scramble eggs there IIRC). So-it's a great concept-longevity, tied into environmental care. Shame it doesn't seem to work for me. (as an afterthought there have been odd occasions where it seems to work-but I noticed small black bits of presumably seasoning in the eggs)Sept 2020 UPDATE: tried Spanish omelette again tonight after some success with small omelette for son last week. Even worse-had to scrape omelette off base of pan-despite cooking ever so gently. Ended up with...well I didn't know what to call it. COMPLETE AND UTTER CRAP.
