Is this knife worth $300? Yes, it is!
I had my doubts at first ... you know, how good can a knife be, better than the German one I have? $80 German knife against a $300 Japanese knife? With the great Amazon return policy, I figured what's to lose, ordered it! First cuts ... oh wow, this thing is sharp. The ease of cutting and the accuracy of ease of placement is wonderful. I did side by side comparo with the German knife ... it's no contest .. but is it worth $300? ..... It's such a joy to use each time each time .... like taking a Ferrari out for a drive vs a BMW. Yes, I'm keeping it, cause it's worth it! If cooking is not a passion ... skip this knife .... if you love cooking, get it!

Great knife
The knife is great but my saya has two cracks now that I will have to glue to fix it but the ergonomics are great. I'm a culinary student and used to western style steel and handles but this knife is super comfortable and a good argument to switch to Japanese steel.

Awesome but chips easily
I own a knife sharpening service and get shuns in constantly. That are amazing knives but the cutting edge is very brittle. Because of this they chip easily. You need to avoid cutting hard root vegetables and doing things like pitting avocados. Should you damage your knife the company does offer sharpening but you will need to send it to Japan or find a local sharpening company.

Beautifully Crafted
I am in awe with these Shun duel core knives. I've been chopping, slicing, and dicing every day. Haven't needed to sharpen it once. It feels good to have such a high quality bladein my hands. I tire of having to sharpen a knife over and over in a single day.
