Easy cutting
I am a sushi chef and this knife is definitely good but there are a few drawbacks. The geometry of the knife makes it very back heavy so it can be a weird transition from a more blade heavy knife. The knife itself works excellent with cutting food as the blade is so thin, however when working with more dense food you may find it more difficult to cut. Finally the handle I have had multiple complements on this knifes handle and while I agree that it looks nice with prolonged use it can begin to hurt as there is a small metal collar at the end of the handle. I gave this knife 4 stars because despite the draw backs it is a very good starter/ intermediate chef knife and can be used in many versatile functions. The sheer ease that it takes to cut the majority was shocking to me and there is a beautiful hanon line on the blade itself.
