Would this be suitable to use under my plant pots to protect the surface of my windowsill from any dirt and water that may drip out of the hole?

It would probably protect your windowsill from dirt but you may be better off with something with a lip round the edge to stop water running off onto your windowsill

How many discs do you get? Also, do they come in sizes between 5mm-75mm diameter?

Thank you for your message, this item is for a pack of 5 discs which are 75mm diameter. I hope this is of help.
